Iran. 2015. Across Tehran small bakeries serve neighbourhoods with 'Noone sangkak', baked on stones, 'taftoon', thin, fast baked bread and 'noone barbari', another form of flatbread. As Tehran grew the number of bakeries have been growing too, but there are still too few. Often customers have to wait over half an hour for their bread. The bakeries are an examply of many industries where time has stood still, compared to other countries. Car repair shops, most cinema's, and hole in the wall electronics shops operate much the same way they did before the 1979 revolution. Attempts to modernize such industries have often stranded because of lack of financing and lack of competition.
