Europe. Italy. Sicily. Marsala. The ancient salt flats and windmill between Marsala and Trapani on the west coast of the island. This is the oldest method of salt production - evaporation by sunlight from salt pans - and these salt works have been in existence since the Phoenicians conquered the island some 2700 years ago and realised the shallow coastal waters and an abundance of sunlight were the perfect ingredients for salt production. 2018
