CHINA. De'an, Jiangxi. 1998. Together with Sandong Province, Jiangxi Province is China's center of duck farms. The ducks used for preparing the famous Beijing duck dishes have white feathers, while almost all the ducks prepared in Jiangxi Province have brown feathers. Here at the Gong Zing Ban Duck Farm, seventy workers process an average of 1,500 ducks each day. About forty of the workers are women. Their job is to pluck the final pieces of feather from the ducksÕ skin. The women ingeniously hold a piece of twine in their mouth, keeping both hands free to wind the twine around the remaining pieces of feather quills and pluck them. Although their base pay is low, the women also receive 0.5 yuan (about $ .07) for each duck they process. A skilled woman can process eighty ducks a day.
